backup - Retaining applications and settings when flashing custom ROMs

The one thing that's been keeping me from flashing a custom Jelly Bean ROM on my Verizon Galaxy S3 (SCH-I535) is the fact that, unlike OTA updates, when I update my phone with a custom ROM, I'll lose all of my apps and settings.I don't want to have to reinstall and reconfigure all of my apps every time a new version of Android comes out.What options are out there for backing up and restoring applications and application settings between custom ROMs?

Pros and Cons of Installing Custom ROMs [Forum Talk]

In this day and age it seems you can’t find a new phone without an eager group of developers ready to support it. Some people come to Android and may not have the slightest clue of what rooting and flashing custom ROMs/mods/kernels is. (I have two of them in my very own household.)If you were ever curious as to why you should root your phone and what benefits you’d get from it. It isn’t without its cons, though. AndroidForums.com user cammykool reposted an article of Locker Gnome’s, a very good breakdown of the pros and cons of installing custom ROMs. Many people have many different reasons.For me, it used to be about making the most out of whatever custom skin came on top of any phone I owned that was not supported by Cyanogen. Now that I have a Galaxy Nexus, I find that I don’t even have a desire to flash any ROM, though I do keep root handy in case the urge pops up (and I do rely on root-specific apps, ROM flashing aside).What about you? Custom ROMs affects on battery life different on unlocked phones?

I am excited to upgrade to a Google device and not deal with locked bootloaders. It is my understanding that the process used to avoid the locked bootloader in my Droid X may have something to do with the short battery life of custom ROMs. Yet, I am curious if all custom ROMs would perform poorly battery-wise because typically they are based off of AOSP or AOKP and therefore don't have the tweaks the phone manufacturer made to Android specific to that device?In other words, if I bought a Galaxy Nexus and installed a custom ROM, battery life would be...I suppose it is a dumb question and the real answer is 'it depends on the ROM.'I just burned through my battery today in a little over 5 hours.
